Ruby chocolate for craft chocolatiers and chefs to launch in April

Barry Callebaut has created a version of its ruby chocolate designed for small chocolate producers and pastry chefs under its Callebaut brand.

RB1 is the first ruby chocolate dedicated to artisans, said the company.

Barry Callebaut launched a mass-market version of the ‘fourth variety’ of chocolate, naturally colored by cocoa, in September last year.

Nestlé has since launched KitKat Chocolatory Sublime Ruby at its KitKat stores and online in Japan and Korea.

Belgium launch

Barry Callebaut will produce RB1 in Wieze, Belgium. The artisan brand will first be available in Belgium from early April 2018, with other countries to follow later.

Barry Callebaut expects ruby will resonate with Millennials, those aged 18–35.
