Barry Callebaut officially introduced ruby couverture in the United States earlier this year and is available in more than 50 countries worldwide, setting the stage for its New York premiere.

Barry Callebaut’s ‘fourth type of chocolate’, Ruby, is set to make its debut at Salon du Chocolat New York, when the show itself premieres in the city from 15-17 November at the Jacob K Javits Convention Center.

The Belgian chocolate maker is acknowledged as bringing the biggest innovation in cocoa since white chocolate was created 80 years ago.

Made from pure cocoa beans, Barry Callebaut has unlocked the flavor and color tone naturally present in select cocoa beans through unique processing that took more than 10 years to perfect.

Salon du Chocolat, which celebrated its 25th anniversary in Paris earlier this month, is the world’s largest event celebrating chocolate, cocoa and pastry.

The Ruby Couverture Experience booth at Salon du Chocolat NY will include:

  • A ruby tasting experience, inspirational ruby creations, and ruby-themed 'selfie' opportunities.
  • Chefs demonstrating a pastry or confection concept with Ruby.
  • Chef Monica Ng, in conjunction with Dan Carr of the Great Performances Design Team, has designed an ethereal ruby dress, which will be featured at the fashion show
